Banana Protein Pancakes

These pancakes taste like a treat but the macros say otherwise. The banana adds natural sweetness so you don't need sugar, and the protein powder keeps the count high without adding bulk. A proper weekend breakfast that won't blow your deficit.

Ingredients

  • 1 medium banana (approx 100g)
  • 2 large eggs
  • 30g whey protein powder (vanilla)
  • 30g oat flour
  • 1/2 tsp baking powder
  • Low-calorie cooking spray
  • 50g mixed berries (to serve)

Method

  1. Mash the banana in a bowl until smooth.
  2. Add the eggs and whisk until combined.
  3. Stir in the protein powder, oat flour, and baking powder until you have a smooth batter.
  4. Heat a non-stick frying pan over medium heat and spray with cooking spray.
  5. Pour small rounds of batter (about 2 tablespoons each) into the pan.
  6. Cook for 2 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  7. Serve topped with mixed berries.

Pro Tip

If the batter is too thick, add a splash of milk. For extra volume, separate the eggs and whisk the whites to stiff peaks before folding in — makes them incredibly fluffy.

Nutrition Notes

34g protein from the eggs and whey, with moderate carbs from the banana and oat flour. At 380 calories this leaves plenty of room in your daily budget. The natural sugars from the banana mean you won't crave anything sweet after.
