Cottage cheese on toast is having a moment, and for good reason. It's essentially a high-protein canvas that works with sweet or savoury toppings. This savoury version with tomatoes and seasoning is ridiculously simple and properly filling.
Ingredients
- 2 slices wholemeal bread
- 150g cottage cheese
- 6 cherry tomatoes, halved
- 1 tsp everything bagel seasoning (or sesame seeds and dried garlic)
- Drizzle of balsamic glaze
- Black pepper
- Small handful of fresh basil (optional)
Method
- Toast the bread to your liking.
- Spread the cottage cheese generously over both slices.
- Top with halved cherry tomatoes.
- Sprinkle with everything bagel seasoning and black pepper.
- Finish with a light drizzle of balsamic glaze and fresh basil if using.
Pro Tip
Look for high-protein cottage cheese from Aldi or Longley Farm at Sainsbury's. The protein content varies hugely between brands — check the label and aim for 12g+ per 100g.
