Ingredients
- 6 slices turkey breast (approx. 120g total)
- 2 tbsp light cream cheese
- ¼ cucumber, cut into thin batons
- Small handful of spinach or rocket
- Fresh dill or chives, chopped
- Black pepper
Method
- Lay the turkey slices flat on a board.
- Spread a thin layer of cream cheese over each slice.
- Place a cucumber baton and a few spinach leaves on one edge.
- Sprinkle with herbs and black pepper.
- Roll up tightly and secure with a cocktail stick if needed.
Pro Tip
Roll them on the day but prepare the fillings in advance. Pre-assembled roll-ups become soggy after a few hours as the cucumber releases moisture. If taking to work, wrap each one individually in cling film.
