This salad is the opposite of sad desk lunch. The feta, olives, and lemon dressing give it proper flavour, and the chicken keeps the protein count high. It's fresh, filling, and you'll actually look forward to eating it.

Ingredients

  • 150g cooked chicken breast, diced
  • 60g mixed salad leaves
  • 80g cucumber, diced
  • 60g cherry tomatoes, halved
  • 30g red onion, thinly sliced
  • 30g feta cheese, crumbled
  • 6 Kalamata olives
  • Dressing:
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • Salt and black pepper

Method

  1. Arrange the salad leaves in a large bowl.
  2. Top with diced chicken, cucumber, cherry tomatoes, red onion, feta, and olives.
  3. Whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently.

Pro Tip

Pack the dressing separately if you're taking this to work — it keeps the leaves crisp. Toss just before eating.
