Chicken Caesar Wrap

A chicken Caesar wrap that actually delivers on protein without drowning in creamy dressing. Using Greek yoghurt instead of mayo for the dressing cuts the fat drastically while keeping that tangy Caesar flavour.

Ingredients

  • 150g cooked chicken breast, sliced
  • 1 large wholemeal tortilla wrap
  • 30g cos or romaine lettuce, shredded
  • 10g Parmesan, shaved
  • Light Caesar dressing:
  • 30g fat-free Greek yoghurt
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 small garlic clove, minced
  • 1 anchovy fillet, mashed (optional)
  • Black pepper

Method

  1. Mix together the Greek yoghurt, Dijon mustard, lemon juice, garlic, and mashed anchovy. Season with black pepper.
  2. Warm the tortilla in the microwave for 15 seconds.
  3. Spread the Caesar dressing down the centre of the wrap.
  4. Layer the lettuce, sliced chicken, and Parmesan shavings on top.
  5. Fold in the sides and roll tightly. Cut in half on the diagonal.

Batch cook chicken breasts on Sunday — poach 4-5 in seasoned water for 20 minutes, cool, slice, and refrigerate. You'll use them across multiple recipes all week.
