A dozen hard-boiled eggs in the fridge is one of the most useful meal prep items you can have. Each egg is 78 calories and 6g of protein — they take zero effort to eat, need no reheating, and last a week. Grab one as a snack, slice them over salads, or add them to any meal that needs protein.

Ingredients

  • 12 large eggs
  • Cold water

Method

  1. Place the eggs in a single layer in a large saucepan. Cover with cold water by 2–3cm.
  2. Bring to the boil over medium-high heat.
  3. Once boiling, cover the pan, remove from heat, and leave for exactly 12 minutes.
  4. Transfer the eggs immediately to a large bowl of iced water (or very cold running water) for 10 minutes.
  5. Peel or leave unpeeled. Store in the fridge for up to 7 days.

Pro Tip

The iced water bath stops the cooking instantly and makes peeling easier by causing the egg to contract slightly away from the shell. Eggs that are slightly older (not freshly laid) peel much more cleanly than very fresh eggs.

Nutrition Notes

Hard-boiled eggs are a complete protein food. The white provides 3.5g of protein and the yolk provides the remaining 2.5g along with fat-soluble vitamins, choline, and healthy fats. Eating the whole egg is nutritionally superior to egg whites alone.
