Asian Chicken Lettuce Wraps

Lettuce wraps are one of the most satisfying low-carb meals available — the crunch of iceberg lettuce and the savoury filling work together in a way that doesn't make you feel like you're eating diet food. The filling takes 12 minutes.
Ingredients
- 400g minced chicken (or turkey mince)
- 1 head iceberg lettuce, leaves separated into cups
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 spring onions, sliced
- 1 tbsp low-sodium soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar
- 1 tbsp vegetable oil
- 1 red chilli, finely sliced (optional)
- Fresh coriander to serve
Method
- Heat the vegetable oil in a frying pan over high heat. Add the minced chicken and cook for 5–6 minutes, breaking up until cooked through.
- Add the garlic and ginger. Cook for 1 minute.
- Add the soy sauce, oyster sauce, sesame oil, and rice vinegar. Toss together.
- Cook for 2 more minutes until the sauce reduces and coats the mince.
- Serve the chicken mixture in iceberg lettuce cups, topped with spring onions, chilli, and coriander.
Pro Tip
Serve the filling in a bowl alongside the lettuce leaves and let everyone fill their own at the table — this prevents the lettuce wilting if you're eating over 10–15 minutes. The filling stays hot in the bowl.
Nutrition Notes
Iceberg lettuce provides negligible carbohydrates — around 1.5g per 100g. Using it as a wrap base makes this meal compatible with strict ketogenic approaches at under 5g total carbs per serving, while still delivering a satisfying, flavourful dinner.
